Give them the current prices. Get a quote, or print the page off a website. If you bring the bike in to a Cervelo dealer the easiest thing to do is buy the replacement off them, and they will obviously give you a quote beforehand. No need to waste time looking for bargains, if they're going to pay anyway. Get nice cages, saddle, etc, Make sure you get new wheels too if they've been damaged. Don't be shy. I'm not condoning spurious claims (I really hate that) but you have been seriously inconvenienced by just having to go through this and be without the bike for a period of time. Don't accept any allowance for depreciation, it's not like a car.
